Fran, Centre Manager for the National Park Visitor Centre at the Dales Countryside Museum in Hawes, shares a recipe for Easter Cakes. The recipe was given by Mary Bell for use in the Dales Countryside Cookbook, published by the Friends of the Museum in 1993.
Easter Cakes

Ingredients:
- 3 ounces butter
- 6 ounces plain flour
- 3 ounces caster sugar
- 2 ounces clean dry currants
- Pinch cinnamon
- 1 egg
Method:
Beat the butter to a cream, then mix in sugar, flour, cinnamon and currants. Make into a paste with beaten egg. Roll out thinly and cut into rounds. Sprinkle with caster sugar, bake on greased baking trays in moderate oven until slightly browned.
